we begin by carefully harvesting wild juvenile yellowtail (mojako) ourselves.
Because mojako are delicate and difficult to raise, we provide them with carefully selected, nutrient-rich feed.
From an early stage, we raise each fish with meticulous attention to its health and wellbeing.

Beer yeast in the feed naturally increases the levels of inosinic acid and glutamic acid, the key compounds responsible for rich umami.
